Instructions

Step 1
Add sliced ginger, crushed garlic and 2 spring onions to water in a large pan.
Step 2
Bring to boil. When it has reached the boil, turn off the heat, add chicken and place a lid securely on to of the pan.
Step 3
After 30 minutes, remove chicken from pan. Retain the water.
Step 4
Add soy sauce, chilli and oyster sauce to water and boil for 5 minutes.
Step 5
Remove garlic, ginger and spring onion from broth. Retain water.
Step 6
Slice peppers and allow to cook in broth for 3 minutes.
Step 7
Remove peppers and add noodles. Cook to packet instructions. Then remove from broth.
Step 8
In a bowl as the noodles, peppers and chicken (sliced) and ladle over broth. Top with chopped spring onion and coriander.
