Instructions

Step 1
Cut the stalks of both the bok choy and green onion. Slice ginger into thin slices. Debone chicken bones from chicken thighs.
Step 2
Boil the bok choy, green onion stalkes, chicken bones, ginger slices and a pinch of salt into 5 cups of water in a pot and boil for 35 minutes.
Step 3
Fry miso paste with the sesame oil until dark brown.
Step 4
Pour the broth slowly into the miso paste mixture to create a creamy emulsion. Add broth one scoop at a time to create a creamy textured broth.
Step 5
Boil the hard boiled eggs for 6 minutes to create a creamy yolk.
Step 6
Boil the ramen noodles as well as blanching the bok choy briefly into the broth.
Step 7
Assemble the ramen adding additional fish cakes, bean sprouts and green onion to garnish to taste.
