Italian Meatballs

This recipe has been in my family for 4 generations! The meatballs are so flavorful and will make you want to eat them everyday.

Ingredients
4 servings

1 lblean ground beef

1 lbground pork

¼ cupparsley
chopped

⅓ cupgrated pecorino romano cheese

1egg

8 clovesgarlic
minced

1 teaspoonkosher salt

1 teaspoonground black pepper
2 cupschoppedbread
toasted

2 tablespoonsvegetable oil

6 oztomato paste

1 tablespoonitalian seasoning

28 ozcrushed tomatoes

parmesan cheese
grated or shredded, for topping
Instructions
Step 1
In a large bowl, combine: beef, pork, cheese, parsley, egg, HALF the garlic, salt, pepper, and the bread. Mix until well combine, then form into balls a bit larger than a golf ball.
Step 2
Heat a 5-6qt pot over medium high heat for 3 minutes. Add the oil, it should shimmer and move like water around the pan.
Step 3
Sear the meatballs, in batches (make sure there is space between them so they get brown), for 2-3 minutes on each side. They should be golden brown. Remove and set aside.
Step 4
Turn the heat down to low. Add the tomato paste, the other half of the garlic, and Italian seasoning. Stir to combine and cook for 3-5 minutes, stirring occasionally.
Step 5
Add the crushed tomatoes and stir to combine. You can use a whisk to help it come together faster.
Step 6
Add the meatballs back in and bring to a simmer. Cover and cook until the meatballs are cooked through (155F internal temperature) , about 40 minutes to 1 hour. If you don’t have a thermometer just cut a meatball in half, and if they are still pink in the middle, cook for an additional 15-20 minutes and check again.
Step 7
Serve with pasta and top with Parmesan cheese. Enjoy!
