Spicy & Creamy Shrimp
Spicy + Creamy Shrimp and Rice 👌🏻 SO freaking good, easy and comforting. It takes me back to a dish my dad used to make and call it 'camarones a la diabla' 🙊 and when I tried the authentic 'camarones a la diabla' they couldn't be further from my dad's version, but still...this is a favorite of mine and I know you'll love it too.

Ingredients
1 servings
1 lbshrimp
peeled and deveined, save the shells
1 tsppaprika
1 tspseasoned salt
2 Tbspbutter
2 Tbspflour
1 cupwhole milk
2 cupsseafood stock
start with 1 and add more if you want to thin it down
2 Tbspchipotle in adobo
2 Tbsptomato paste
1 tsporegano
1shallot
chopped
salt
pepper
to taste
1 tspcrushed red peppers
2 Tbspcilantro
chives
veggies
I used onion, leeks, tomato, parsley, celery, garlic and carrot
1bay leaf
1chile de arbol
â…“ cupwhite wine
3 cupswater
Black peppercorns
salt
Instructions
Step 1
1.- sautée your veggies for stock with shells for 5 min. Deglaze with white wine and reduce by half. Add in the rest of the spices and water. Bring to a boil and simmer covered for as long as you can.
Step 2
2.- season your shrimp with the paprika and seasoned salt.
Step 3
3.- sear your shrimp for 1 per side on a very hot pan. Put on a bowl to rest.
Step 4
4.- melt your butter with the flour, add in oregano, shallots and cook for 2-3 min.
Step 5
5.- Add in tomato paste and chipotle. Cook for 2 min.
Step 6
6.- Add in milk and seafood stock. Bring to a boil so it thickens, if you need more add more stock.
Step 7
7.- Add in shrimp with the juices it collected in bowl.
Step 8
8.- Add in crushed red peppers and herbs.
Step 9
9.- serve over rice.
