Step 1
Preheat oven to 400°F / 200°C / Gas 6.
Step 2
Add chicken to a bowl. Season with lemon juice, dried oregano, smoked paprika, garlic. Rub the seasonings into the chicken to evenly coat. Add chicken to a parchment-lined baking sheet.
Step 3
Add potato and bell pepper to the baking sheet and drizzle over olive oil. Roast for 25-30 minutes, until the potatoes are cooked through and crisp and chicken is white throughout.
Step 4
Allow to cool. Then portion into meal prep containers and garnish with olives, feta and fresh dill (if using).
