Instructions

Step 1
Prep your meat and vegetables by cutting the roast, potatoes, and onion into large bite sized pieces.
Step 2
Heat curry paste over medium/high heat, until the oil starts to sizzle and the curry is fragrant.
Step 3
Remove curry paste and mix well with coconut milk; set aside.
Step 4
Using the same pan you used for the paste, sear the cubes of chuck roast (don't cook through).
Step 5
Place seared chuck roast in the bottom of your crock pot. Place onions and potatoes on top of meat. Pour curry paste/coconut milk mixture over meat and veggies.
Step 6
Turn crockpot on low, cook for 6 hours or until potatoes are soft. You can serve at this point, or turn the pot to keep warm until the meat is totally tender. Letting it sit warm for a while also allows the flavors to meld more. This meal is great for leftovers!
Step 7
When you are within 30 minutes of eating, cook some jasmine rice. Serve curry over rice and top with peanuts or cashews (recipe calls for peanuts, but I love cashews).
