Ingredients

2 TbspOlive oil
2 lbsground italian sausage
mild or spicy
2yellow onions
diced
6 Tbspminced garlic
2 x 28 ozcrushed tomatoes
cans
8 cupschicken broth
4 Tbspbasil
fresh chopped
salt
to taste
pepper
to taste
sugar
40 ozcheese tortellini
refrigerated, or spinach
5 ozfresh spinach
4 Tbspparmesan cheese
shredded
⅔ cupheavy cream
Instructions
Step 1
Heat a large, heavy bottomed pan over medium-high heat. Heat vegetable oil and add diced onion. Sauté until onions are soft
Step 2
Crumble italian sausage and garlic with the onion. Cook until sausage is no longer pink
Step 3
Stir in crushed tomatoes, chicken broth, basil, salt and pepper, and a pinch of sugar to combat slight acidity.
Step 4
Bring to a boil, reduce heat to low, and cover. Let soup simmer for 20-30 minutes.
Step 5
Add tortellini and cook for 7-8 minutes
Step 6
Add spinach and simmer for about 2-3 minutes longer, until pasta is tender.
Step 7
Add heavy cream and serve with shredded parmesan cheese
