Step 1
1. Combine 50ml amaretto, 50ml tia maria and 1 tsp vanilla essence with coffee
2. Seperate eggs
3. Whisk egg yolks with 2 cups of sugar and mascarpone until combined and creamy
4. Add remaining 30ml of tia maria to egg mixture
5. Whip the cream and 1 tsp of vanilla essence together
6. Fold the cream and egg yolk mixture together
7. Beat egg white and salt together while gradually adding remaining caster sugar until glossy, stiff peaks form (add more sugar if a meringue isn’t forming)
8. Fold egg whites softly into yolk and cream mixture
9. Start to assemble the tiramisu. Start with a layer of the cream mixture, dip biscuits quickly into coffee and layer on top of the cream followed by another layer of cream
10. Continue until all the mixture is used
11. Cover the top with chocolate powder and place in the fridge overnight
