Instructions
Step 1
Combine peas, carrots, leeks, mushrooms and broth in a medium saucepan. Simmer until vegetables are tender.
Step 2
Separate vegetables and broth, reserving both for later use.
Step 3
Melt butter in sauce pan, add flour. Cook stiring contiunailly for one minute.
Step 4
Whisk in milk and reserved broth and sherry. Reduce Heat. Whisk until thickened.
Step 5
Add chicken, reserved vegetables, tarragon, salt and pepper. Heat to serving temperature.
Step 6
To serve, Cut corn bread for each person, and spoon chicken mixture over the top.
