Instructions

Fried vegetables

Step 1
Chop the spinach and basil. Quarter the tomatoes.
Step 2
Heat the oil in the pan. Leave the heat on high and add the tomatoes. Fry for 1min then. Pour in the wine and let it reduce.
Step 3
Add the spinach. Allow the spinach to set then season with salt and pepper

Ricotta filling

Step 4
Grate the parmesan.
Step 5
To a bowl add the Ricotta, fried spinach and tomatoes, basil, salt, pepper and grated parmesan. Stir until well combined.

Sandwich

Step 6
Cut the bread in half. Spread both sides with olive oil. Toast until golden brown.
Step 7
Chop the dried tomatoes and slice the mozzarella.
Step 8
Spread the bottom half of the bread with the basil mayonnaise. Now add the ricotter mix to it.
Step 9
First place the dried tomatoes and then the mozzarella on top.
Step 10
Put the bread in the oven at grill level (200 degrees) and bake for about 5 minutes until the cheese has melted.
Step 11
Place the second half on top. Quarter the bread and enjoy!
