Teriyaki crockpot shredded chicken

You could just buy a bottle of good teriyaki
Sauce and save time, or use your own
variations if you have any, but teriyaki
chicken is great ! Also, I would double all the
sauce ingredients because it is so good I
would like more! And you know I prefer thigh

3 lbschicken thighs
⅛ tspblack pepper
½ cupbrown sugar

½ cupsoy sauce
2 Tbsrice wine vinegar
2 tspfresh ginger
2 clovesgarlic
crushed
2 Tbscorn starch
2 Tbswater

Instructions
Step 1
1. Place chicken in crockpot, season with pepper
Step 2
2. Medium bowl - whisk the brown sugar,soy sauce, ginger, garlic, vinegar and pour over the chicken in the crockpot
Step 3
3. Cook the chicken, if cooking on High cook for 2 hours and 15 min max If you cook on LOW you will need to cook 3 hours 30 min (chicken should reach 165 deg f

4. Remove chicken from liquid and shred (or dice)

5. Pour the sauce (juices) into a sauce pan and heat to boiling
Step 6
6. While bringing to a boil - mix the cornstarch and water together then add it to the boiling sauce stirring to thicken

7. Combine the sauce and chicken to thoroughly coat the chicken in sauce

8. Serve hot over cooked rice or salad

9. I suggest adding some cooked frozen peas and carrots 1- 2 cups you can add them while boiling the sauce to cook them

Cornstarch slurry: 1 tbs water 1 tbs cornstarch for a thin sauce and 2 tbs water and 2 tbs cornstarch for richer thicker sauce (preferred)

One more option is to add a dollop of peanut butter when thickening the sauce. Gives it a lovely taste and texture! ENJOY!
