Instructions
Step 1
Cooking the Macaroni
Preheat fire to medium high heat.
Step 1- Add 3 quarts water and 1
teaspoon salt into a large pot and
stir. Let come to a simmer
Step 2- Add 16 ounces long
macaroni. You can also break the
macaroni in half before adding it to
the pot or you can add it whole. Let
simmer for 11-12 minutes.
Step 3- Add macaroni into strainer.
Rinse with cold water (Optional).
Return strainer back on top of pot
and place lid on top. Let sit for 40
minutes. This will allow the
Macaroni to dry.
Note- All cheeses must be cold
before grating.
Step 4- Grate 16 ounces of Extra
sharp cheddar cheese, 8 ounces
Monterey Jack cheese and 5
ounces Parmesan cheese.
Making the cheese sauce
Note- Make sure you don't cook
your cheese on a high
temperature. Melting cheese at a
high temperature causes the fat to
separate from the cheese resulting
in an oily and grainy macaroni and
cheese. Also the cheese sauce will
thicken as it cools
Preheat fire to low heat
Step 5- Add 1 cup heavy cream
(Room temp), 1/2 Cup sour cream
(Room temp), 2 large eggs (Room
temp), 1/2 cup melted butter, and
salt and black pepper to taste
1 teaspoon Tony Chachere's
creole seasoning, 1 teaspoon
Onion powder and 1 teaspoon
Garlic powder. Stir with whisk until
combined.
Step 6- Add 12 ounces shredded
Extra Sharp Cheddar
cheese (reserve 4 ounces), 8
ounces shredded Monterey Jack
cheese and 4 ounces shredded
Parmesan cheese, (reserve 1 Oz).
Stir continuously for 10 to 15
minutes or until cheese has
melted.
Baking your Macaroni and cheese
Step 7- spray pan with Pam or coat
with butter.
Preheat oven to 350 degrees
Step 8- Add Long macaroni and
cheese sauce into large pot. Stir
until the long macaroni is coated
with cheese sauce.
Step 9- Add Macaroni mixture into
baking pan. Spread around as even
as possible. Sprinkle 1 ounce of
shredded Parmesan cheese and 4
ounces shredded extra sharp
cheddar cheese.
Step 10- Place into a preheated
350F degree oven for 35 minutes.
Set Oven broiler to High.
Step 11- put Baked macaroni
under broiler for 3 minutes. Make
sure you check your baked
macaroni each minute to make
sure it doesn't burn.
Step 12- Remove Baked macaroni
from broiler part of your oven. Let
cool for 5 minutes before serving.
