Instructions
Step 1
Beat your egg and fold it in to your leftover cold mashed potatoes.
Step 2
Do not over work or kneed your dough. It will give you a tougher finished product.
Step 3
Add the baking soda, Fold your flour in 1/4 cup at a time. You should have a loose dough that holds together when picked up. ** You can add less or more flour as needed.**
Step 4
When your dough is ready, quarter and roll into a 3/4 to 1 inch cylinder.
Step 5
Cut 1/2- 3/4 inch pieces off.
Step 6
Drop into gently boiling water until they float to the top.
Step 7
Remove, drain and top with your favorite sauce.

Step 8
For a crisp exterior, use equal parts butter and oil in a fry pan over medium high heat.
Step 9
Once the butter melts and begins to bubble, add your gnocchi in small batches to prevent clumping.
Step 10
Gently toss and cook until they have a golden brown exterior.
Step 11
Repeat this step for all your gnocchi.
