Chicken katsu curry

Instructions

For the sauce

Step 1
Peel the carrots, slice both the onions and the carrots.
Step 2
Fry the carrots for 5 minutes in olive oil over medium heat to soften. Afterwards add the onion and fry for 3 more minutes.
Step 3
Add the curry powder and garam massala and stir constantly for 2 minutes. Add chicken stock and leave to simmer on low heat for 10 minutes.

For the chicken

Step 4
Beat the chicken to tenderise and season with salt and pepper.
Step 5
Coat in flour, egg and then breadcrumbs.
Step 6
Heat sunflower oil in a pan and once oil is hot place the chicken in and fry for 2 to 3 minutes on each side
