Ingredients
4 servings
8 ozfeta cheese
room temperature
2 cupscherry tomatoes
2zucchinis
medium, sliced into thick moons
1red bell pepper
chopped
0.5sweet onion
chopped
⅓ cupolive oil
5 clovesgarlic
minced
½ tspitalian seasoning
garlic powder
to taste
⅛ tspred chili flakes
8 ozpasta
cooked
1 cuppasta water
reserved
¼ cupfresh basil
chiffonaded
salt
to taste
pepper
to taste
Instructions
Step 1
Preheat oven to 425°F.
Step 2
Toss vegetables with olive oil, garlic, and seasonings in a 9x13 baking dish. Nestle the block of feta into the middle of the veggies.
Step 3
Roast for 15 minutes. Stir the vegetables and roast an additional 10-15 minutes or until vegetables are tender. Broil 2-3 minutes to lightly brown the cheese.
Step 4
While the veggies are baking, cook pasta al dente in salted water. Drain but be sure to reserve at least 1 cup of water.
Step 5
Gently stir the feta and vegetables in the baking dish.
Step 6
Mix in pasta adding enough pasta water to make a creamy sauce.
Step 7
Stir in fresh basil, season with salt & pepper to taste, and serve.
