Instructions

Step 1
Preheat the oven to 170. Heat a large pan with a splash of oil and add the two large chicken breasts to the pan. Brown on both sides then baste with a bit of butter.
Step 2
Remove the chicken from a pan and place on a wire rack ready to go in the oven. It will only need 15-20 mins max in the oven. Don't over cook it
Step 3
Add the bacon to the same pan the chicken was on and get it crispy. Remove from the pan and place the butter on the pan. Melt the butter and add the chilli flakes, shallots and garlic and infuse with the butter. Add salt at this stage
Step 4
Once soft, add the mushrooms and cook until brown. Add the puree and mix well. Cook until the puree has gone a slightly darker colour. At this stage get your pasta into salted boiling water
Step 5
Place your broccoli onto a oven tray with a bit of oil and seasoning. Place into the oven and cook for 10 mins. Check on this to make sure it doesn't burn
Step 6
Add the double cream to the pan and mix well. Turn the heat on low. Add the bacon and the chives. Remove the chicken from the oven and cut it up. Add it to the pan with the broccoli and mix through. The sauce should be quite thick at this stage
Step 7
Add a hefty amount of pasta water to the sauce to loosen it up. Add the pasta to the sauce and mix. Serve and enjoy!
