Ingredients

1 Tbspcoconut oil
2potatoes
sweet, medium, peeled & diced
1 Tbspgarlic
minced
3fuji apples
cored & diced
8carrots
peeled & chopped
1 cupchickpeas
rinsed and drained
6 ouncesbulk turkey sausage
cooked, spicy
4 cupschicken stock
11 ouncescoconut water
2 cupswater
1.5 TSPground ginger
1 tspsalt
2 Tbspsage
4 Tbspgreek yogurt
for serving
Instructions
Step 1
In a large pot, medium heat, melt coconut oil. Add sweet potatoes & garlic and sautéed until softened. Add apples, carrots, chickpeas, broth, coconut water, ginger, salt, sage & water. Bring to a boil. Reduce heat to low and simmer for 30 minutes, or until carrots and apples are tender. Using an immersion stick or blender, puree until smooth. Stir in cooked turkey sausage. Serve with a dollop of greek yogurt on top.
