Instructions

Step 1
(Optional) Wash your chicken with lime and vinegar, and trim any excess fat
Step 2
Blend your chipotle peppers with the seasonings listed including the onion, and one cup of water
Step 3
Pat chicken dry, cut into smaller pieces, and add your chipotle seasoning blend (I only used half of this seasoning)
Step 4
Allow chicken to marinate for one hour or overnight if possible
Step 5
Chicken should be seared in oil until a beautiful crust formed on all sides
Step 6
To your pot, add one cup of water or chicken stock, and simmer for 20 minutes
Step 7
Serve over cilantro lime rice, garnished with parsley
