Simple Persian One Pot Salmon

You'll need two small baking dishes. I use glass dishes from IKEA. Each portion is made in a small baking dish.
It's perfect for food prep that you can keep in the fridge for a couple of days and cook when you're ready, or pulling together on a busy work night. Get creative and use different spices and herbs to create different flavours - you can also use different vac-packed grains - I recommend trying quinoa and lentils to change it up a little.

Step 1
Pat Salmon dry with kitchen roll. Rub in a little olive oil and season well. Set aside

Put your oven on to a 175 C fan to heat up

Empty the grains into a bowl. Add the lemon juice, Zatar, season well and mix through. Set aside.
Step 4
Create a crust for the salmon by bashing the almonds in a bag with a rolling in until they are broken. Finely chop the fresh coriander. Pop the almonds and coriander into a bowl, add a pinch of chilli flakes and a drizzle of olive oil and mix well.
Step 5
Chop your pepper and onion into chunks. Take two squares of baking foil, place the chopped veg in the middle, drizzle with oil, season and fold the foil around the veg creating a sealed parcel.
Step 6
Then it's time to build your dish. Place the foil parcel in the end of the glass dish. Then split the rice between the two dishes. Spoon over a tablespoon of water to both portions of rice. Place the salmon fillet on the top or the rice, and then pat the herby crust on top.
Step 7
Wrap each of the dishes with foil, folded nice and tightly around the dish.
Step 8
Cook for 15 mins with the foil on and then 5 minutes with the foil off. Make sure the salmon is cooked through before you serve up.
