Instructions
Preheat oven to 375F
Step 1
Cover the steak with wax paper Then carefully butterfly steak and season both sides with parsley, salt and pepper. (FYI, Martha Stewart has a great post on how to butterfly meat.)
Step 2
Sprinkle the cheese over the beef leaving 1 inch border along the edge. Grate lemon zest directly over cheese. Place spinach into a bowl; add a pinch of salt and squeeze the lemon juice (watch for seeds) then mix to combine. Arrange spinach on top of the lemon zest & cheese making sure to not go too close to the edge. Remember to leave 1 inch border along the edges.
Step 3
Starting from the end closest to you, begin tightly rolling. Tie pinwheels with kitchen twine, toothpicks or skewers to keep them from falling apart.
Step 4
With a sharp knife, slice beef between twine. (about 6-7 pinwheels)
Step 5
Add butter or oil to a cast iron skillet over med-high heat. Sear pinwheels for about 2-3 min. on each side; remove to an oven-safe dish.
Step 6
Pop into oven for about 5-15 min. Depending on desired doneness.
Step 7
Remove from the oven and tent with foil to rest for about 5 min. Remove twine & serve with salad, pasta with marinara, or mashed potatoes.
