Flattened Lemony Chicken with Borlotti Beans, Tomatoes and Spinach

Flattening a chicken breast helps it cook faster and more evenly. A rolling pin works best! The longer you leave the chicken to marinade, the better. Try swapping the borlotti beans for fresh green beans for a different twist.

Ingredients
4 servings
4chicken breast fillets
bashed to 0.5cm thickness
4 Tbspextra virgin olive oil
2lemons
zest and juice
2 sprigsfresh rosemary
leaves finely chopped
2celery stalks
finely chopped
1carrot
peeled and grated
1onion
peeled and finely chopped
3fresh bay leaves
300gcherry tomatoes
cut in half
200gbaby leaf spinach
200mlchicken stock
3tins borlotti beans
cooked, drained
Instructions
Step 1
Place the flattened chicken into a deep tray and coat it in 2tbsp olive oil, lemon zest and juice, rosemary and some seasoning. Set aside.
Step 2
In a large frying pan, sauté the celery, carrot, onion, bay leaves and the 2tbsp of remaining olive oil with seasoning for 10 mins on a low heat.
Step 3
Add the tomatoes to the pan and turn the heat up. Allow to cook for 2 mins, then add the spinach, stock and borlotti beans, bring to the boil then turn down to a simmer for 5 mins. Remove from the heat and set aside. This should be warm to serve, not piping hot.
Step 4
In a large non-stick pan, fry the chicken on a medium heat for 6 mins each side.
Step 5
Remove onto plates and serve with the borlotti beans, an extra wedge of lemon and a drizzle of olive oil.
