Step 1
On a low heat, melt some butter in a frying pan and place a tortilla in the centre.
Step 2
Crack the eggs over the tortilla and beat until combined.
Step 3
Season with salt and sprinkle over the cheese.
Step 4
Add the smoked paprika and chives and whisk the eggs and cheese together slightly.
Step 5
Place another tortilla on top and allow to cook for 5 minutes or golden brown.
Step 6
Coat the top tortilla with some butter and flip. Allow to brown before serving. Cut into individual slices and enjoy.
