Instructions

Step 1
Soak urid dal in water over night. Drain and rinse with fresh water. Cover with water and bring to the boil. Reduce heat to a simmer and cook for 30 minutes until tender. Add more water if needed, when cooked drain and add fresh water until it is about half way up the cooked dal
Step 2
Add the tomato purée and creamed coconut and return to the heat and bring to a simmer
Step 3
In a mortar add the salt, roughly chopped peeled ginger and garlic and chilli flakes. Grind to paste with a pestle and add to the dal.
Step 4
Stir through the paste, creamed coconut and purée and cook for 10 minutes.
Step 5
Add the plant butter and garam masala. Stir through until mixed through and the plant butter melted. Taste before seasoning and then serve and enjoy!
