Instructions
Step 1
Bring a large pot of salted water to a boil and cook the pasta until very al dente, about 7-8 minutes. Reserve 1 cup pasta water and drain the pasta.
Step 2
While the pasta is cooking, in a large sauté pan big enough to hold the sauce and pasta, cook the garlic and onion in half the olive oil until lightly golden brown, about 5-7 minutes. Add the cauliflower and the salt and cover with a lid, stirring every 2 minutes until very tender, for a total of 8-10 minutes.
Step 3
Add the cauliflower mixture to a blender. Add 1/2 cup pasta water and remaining 1/4 cup olive oil and blend until very smooth and silky.
Step 4
Pour the sauce back in the sauté pan and add the spaghetti, lemon zest, juice and remaining pasta water. Using tongs, toss well to coat in the sauce and warm through. Add a final extra squeeze of lemon juice and lots of freshly ground black pepper.
