Step 1
Preheat oven to 200°C.
Step 2
Cut pumpkin in chunks and put it together with red bell pepper, onion, garlic, olive oil, salt, pepper and paprika powder on a baking sheet for 30min.
Step 3
After your veggies are ready, take them out of the oven and mix them together with coconut milk in a blender.
Step 4
Cook your pasta, rinse them as soon as they’re all dente and then put them back in the pot, pour the sauce over and heat it up for a few minutes.
Step 5
Add the pasta to your plates and add optional Parmesan on top.
