Golden Cauliflower Florets

Instructions
Step 1

Place cauliflower stem up. Remove all the leaves.
Step 2

Make vertical cuts around the stem, separating larger florets.
Step 3

The thinner the stem, the smaller the florets. Cut them off from the top of the stem and separate them by hand.
Step 4

When separating florets, make sure each of their clusters is uniform in size to cook in the same amount of time.
Step 5

To achieve golden caramelization, we need a flat surface. Cut each large floret or cluster of smaller florets in half.
Step 6

Place butter on a cold skillet and melt it on medium heat. Place cauliflower florets flat side down, in one layer, sprinkle with salt and cook until golden brown for about 10-15 minutes.
