Instructions
Step 1
put the garlic, celery, carrot, and onion into a blender and pulse until minced
Step 2
heat 3 tbsp olive oil in a saucepan and add the vegetables.
Step 3
Saute to soft then add the calamari and half of the parsley.
Step 4
Cook on a high heat for a couple of minutes and then add the wine.
Step 5
When some wine has evaporated add the tomato and chilli and season.
Step 6
Continue to cook on a medium heat for about 10 mins then remove from the heat.
Step 7
Heat the water/vegetable stock.
Step 8
Heat the remaining 2 tbsp olive oil and add the rice to coat. Add 1 ladle of the liquid and stir. Once its has been absorbed add another and continue this way. The rice should be cooked after about 20 mins.
Step 9
Add the calamari and stir for a few mins.
Step 10
Add the remaining parsley, serve with parmesan and rocket
