This Stove Top recipe has been around in my family and has evolved throughout the years. I have given it a couple of twists. I'm always trying to improve it. I've tried a few versions of this recipe and made it in the Crockpot and Instant Pot. But, I still say doing it the old fashioned way, Stove Top, is the best way!! This recipe can be made in the crock pot. Just cook on slow for 10 hours and add the potatoes at the start of the cooking process. Otherwise, they won't cook right and they'll be hard.

Instructions

Step 1
Dice the beef stew meat into small cubes. Season with adobe.
Step 2
Pour olive oil into pan. When oil gets hot, add beef stew meat. (Try to place them flat in the pan. You may have to repeat this part a couple times.) Brown each side - about 2 to 3 minutes. Remove meat and place in a dish or bowl. Cover lightly with aluminum foil and place in microwave oven for later.
Step 3
In the same pan you browned the meat, add a little more olive oil if needed. When hot, add the chopped onion. Stir till cooked and translucent.
Step 4
Add the green peppers & the minced garlic. Stir for about a minute.
Step 5
Add the browned meat, using tongs, cooking wine, Azafran, Adobe, and sprinkle the seasonings over the top of stew.
Step 6
Pour in the diced tomatoes, without liquid, and tomato sauce. Stir everything to make sure meat is covered.
Step 7
Add water if needed to make sure liquid covers all the meat. Cover and cook on medium heat for 30 minutes.
Step 8
Add diced potato chunks. Make sure liquid covers the potatoes. Simmer on low medium heat for about 45 minutes.
Step 9
Add the frozen vegetables and cook on simmer for another 10 minutes.
Step 10
Serve with white rice or brown rice.
