Instructions

Step 1
Preheat oven to 350F
Step 2
In a large bowl, whisk together the spelt flour, baking powder, baking soda, cinnamon, and salt.

In a medium bowl mix the coconut oil and the mashed banana and stir to combine. Add the maple syrup and chia eggs. Stir until well combined.
Step 4
Pour the wet ingredients into the dry and stir until just combined, being careful not to overmix. Gently fold in the blueberries.
Step 5
Prepare a loaf pan. Pour the batter into the pan and bake for 50-60 minutes.
