Step 1
Preheat the oven to 350° grab a banana loaf 9 x 5“ and cut up parchment paper to lay inside the pan

In a medium size mixing bowl, add your bananas, pumpkin purée, egg vanilla extract, cinnamon and salt. Mash everything with a fork or a whisk until chunky and well mixed.
Step 3
Once the wet ingredients are combined, add in your spelt, flour, almond flour, coconut oil, and baking powder mix until combined
Step 4
Spray your bread loaf pan with cooking spray oil and pour in the mixture. Evenly smooth it out with a spatula.
Step 5
This part is optional, decided to make a strudel and combined it 1/3 cup of brown sugar, 1/3 cup of flour and 3 tablespoons of butter and crushed walnuts.
Step 6
Mash up these ingredients with your hands until it becomes a Crumble, and sprinkle evenly on top of the mixture in the loaf pan
Step 7
Cook in the oven for about 20 to 25 minutes until you can stick a toothpick and no wet mixture is on the toothpick
