Step 1
Cook brown rice.
Step 2
Combine coconut aminos, Sambal Oelek and honey in a large bowl. Combine 1 tsp of peanut oil with shrimp in a medium bowl; toss to coat. Heat a wok or large skillet over high heat. Add shrimp to pan; stir fry 2 minutes. Add shrimp to sauce mixture; toss to coat the shrimp.
Step 3
Add 1 tsp oil to the pan; swirl to coat. Cook eggs in heated pan; 45 seconds or so. Chop into bite size pieces, remove from the pan.
Step 4
Add 1 tbsp oil to the pan; swirl to coat. Add rice; stir-fry 4 minutes. Add rice to shrimp mixture.
Step 5
Add 1 tsp oil to the pan; swirl to coat. Add sugar snap peas, peanuts, salt and garlic to the pan; stir-fry 2 minutes or until the peanuts begin to brown. Add shrimp mixture and egg to the pan and cook 2 minutes until thoroughly heated.
