Instructions
Step 1
Mix marinade ingredients in a jug and add to chopped chicken, season & leave to marinate for at least 30 mins.
Step 2
Heat 1 tbsp oil in a pan, add chicken and cook until just cooked, remove.
Step 3
Add ginger & garlic, cook for 1 min over low heat and then add pak choi & broccoli. Cook for 5-7 mins until softened.
Step 4
Make a space in the middle of veg and add eggs, scramble and mix with veg.
Step 5
Pour in rice and add soy sauces & oyster sauce, chicken and mix everything together.
Step 6
Serve with spring onion on top.
