Instructions

Step 1
Marinate chicken in soy, sriracha and cornflour, season well.
Step 2
Heat 1 tbsp oil in a large pan, add chicken and cook over high heat until just cooked. Remove and set aside.
Step 3
Add garlic and ginger, cook for 1-2 mins, add frozen veg and cook for 3-5 mins until softened and cooked.
Step 4
Move veg to one side of the pan and pour in beaten eggs, scramble and then mix through veg.
Step 5
Mix in rice and add soy sauce, add in steamed broccoli if using.
