Island Cabbage Salad

Enjoy this salad which celebrates the produce of Vanuatu. This should use Island cabbage which is very common on the island, but spinach is a good substitute.

Instructions

Step 1
Blanch spinach for 3-5mins. In boiling salted water and then quickly cool in iced water.
Step 2
Remove, cool and strain and squeeze dry.
Step 3
Dice radish, green capsicum, red capsicum.
Step 4
Finely grate ginger, garlic and turmeric.
Step 5
Finley chop island cabbage.
Step 6
Dress and add all remaining ingredients together with the spinach (except the nuts and spring onions) and season to taste, mix so that the dressing is evenly distributed.
Step 7
Top with nuts and sliced spring onion.
