Instructions
Step 1
1. Cook the rice as per the packet instructions.
Step 2
2. To poach the chicken, bring a large saucepan of water to the boil. Add the chicken to the water and wait for the water to come back up to a boil. Once boiling again, cover the saucepan with a lid, remove from the heat and leave to poach for 25-30 minutes. Once poached, remove and allow to cool slightly before shredding.
Step 3
3. To make the dressing, combine all of the ingredients in small bowl and whisk until smooth. Season to taste with sea salt and black pepper.
Step 4
4. To assemble the bowls, divide the rice, raw vegetables and shredded chicken across 2 serving bowls. Top with the avocado and salad dressing.
