Dough & General Instructions
Step 1
Mix the dry ingredients in a large bowl
Step 2
Heat the milk slowly in a sauce pot until 125 degrees exactly. Once temp is hit, move into a small container. Immediately add 1 tablespoon of sugar and the dry yeast. Lightly stir to incorporate and leave to activate.
Step 3
Slowly melt butter. In a separate pan whisk together 3 egg yokes. Once butter is melted, but not super hot, slowly pour into the egg mixture while stirring rapidly.
Step 4
Add egg/butter mixture to milk and yeast. Very lightly stir to incorporate.
Step 5
Slowly mix the wet ingredients into the dry ingredients. Do about 1/4th amount at a time, hand mix with a spoon, repeat until all is mixed.
Step 6
Lightly flower a surface and your hands. Then put dough on surface and start to knead. We don't want to over kneed! Only do so for about 3 to 4 minutes. The dough should be somewhat tacky, but not super sticky. DON'T make it too dry. Frankly, this will just take practice. lightly butter a large bowl and put the dough in the bowl. set in a warm spot for 1 hour to rise. should double in size.
Step 7
Get a scale out (or wing it). You should portion out the dough into 2.3 ounce sections. Roll it into a ball. Will be very slightly larger than a golf ball. Put on a pan with wax paper. Let set another 30 minutes. Once again it'll double in size.
Step 8
Use two fingers on each hand and press down on the dead center. Make a sizeable hole by stretching the dough out. Use a brush to paint on an egg/milk wash (1 egg yoke mixed with 2 tablespoons of milk whisked together)
Step 9
Fill 50% with the cream cheese and 50% with the fruit filling/preserves. Top with the crumble.
Step 10
Bake for 16 minutes at 350 degrees. Immediately put on a cooling rack.
Cream Cheese Mixture
Step 11
Add 8 oz of room temperature Cream cheese to a bowl. Add 4 tablespoons of powdered sugar, 1 tablespoon of vanilla, and zest of 1 small orange. Mix thoroughly with a mixer.
Crumbly Struessel Topping
Step 12
Add 1 tablespoon of melted butter to 2 tablespoons of sugar and 2 tablespoons of flour. Add .5 tablespoons of cinnamon. Mix well with a fork and put in the fridge for 10 minutes. Then use a fork to break into tiny bits.
