Ingredients
4 servings
low-calorie cooking spray
4skinless and boneless chicken breasts
1red pepper
1onion
1 candiet cola
200mlchicken stock
8 Tbsppassata with onions and garlic
4 Tbsptomato purée
2garlic cloves
2 tspgluten-free worcestershire sauce
1 Tbspdark soy sauce
1 tspdried mixed herbs
200gsugar snap peas
1green pepper
1yellow pepper
Instructions
Step 1
Spray a large non-stick pan with low- calorie cooking spray and place over a high heat.
Step 2
Add the chicken, peppers and onion and stir-fry for 5-7 minutes, or until lightly browned.
Step 3
Add the diet cola, stock, passata, tomato purée, garlic, Worcestershire sauce, soy sauce and herbs and stir well.
Step 4
Bring to the boil, cover, reduce the heat to medium-low and simmer for 12-15 minutes.
Step 5
Add the sugar snap peas, stir and increase the heat to medium-high.
Step 6
Cook for another 10-15 minutes, or until the chicken is cooked through and the veg is tender
