Ingredients
4 servings
1 lbboneless skinless chicken breast
cut into bite-size pieces
1 Tbspolive oil
2 clovesgarlic
minced
1 tspfresh ginger
or 1/2 tsp ground
2 cupsbroccoli florets
1red bell pepper
sliced
1 cupmushrooms
sliced
2 Tbsplow-sodium soy sauce
or coconut aminos
1 Tbsphoney
1 tspsesame oil
1 Tbspsesame seeds
Black pepper
to taste
green onions
Optional, for topping
Instructions
Step 1
Heat olive oil in a large skillet over medium heat.
Step 2
Add chicken and cook 5–6 minutes, stirring, until no longer pink.
Step 3
Add garlic and ginger; cook 30 seconds until fragrant.
Step 4
Stir in broccoli, bell pepper, and mushrooms. Cook 4–5 minutes until tender-crisp.
Step 5
In a small bowl, mix soy sauce, honey, and sesame oil.
Step 6
Pour sauce over chicken and veggies. Stir and cook 2–3 minutes until lightly glazed.
Step 7
Sprinkle with sesame seeds (and green onions if using). Serve warm.
