Instructions

Step 1
Put a large saucepan over a medium high heat and squeeze the sausages out of their skins into the pan. Using a wooden spoon, break up the sausages and cook for 10 mins, until browned.
Step 2
Move the sausages occasionally to stop it sticking to the bottom of the pan, but not too much or it will take longer to brown - the sausages should be in small pieces (a bit like mince) and golden in colour when ready.
Step 3
Reduce the heat, add the onions and garlic and cook for a further 5 minutes, stirring often, until softened.
Step 4
Next add the chopped tomatoes, fennel seeds and tomato purée. Season with salt and pepper and cook the sauce for 10 minutes, until thickened and darker in colour.
Step 5
Meanwhile cook the spahetti in a big pan of boiling salted water following the instructions on the pack - approx 11 mins cooking time
Step 6
Drain the spaghetti and return it to the hot pan with the spinach and the sausage and tomato sauce. Stir well and allow the heat to wilt the spinach. Serve topped with parmesan.
