Instructions

Step 1
Finely mince the garlic and scallions in a food processor or blender.
Step 2
Add the hoisin, ketchup, soy sauce, honey, vinegar, ginger, Sriracha, five spice, and sherry and process until well blended.
Step 3
Pour the sauce into a plastic container with a lid, one large enough to hold the ribs (you can cut the ribs into 2 pieces if that makes life easier).
Step 4
Add the ribs to the marinade and turn them so they are well-coated.
Step 5
Or, place the marinade and ribs in a large heavy-duty zipper-top bag and seal.
Step 6
Marinate the ribs in the fridge for at least 4 hours or up to a day.
Step 7
Preheat the oven to 300°F. Line two rimmed baking sheets with aluminum foil (do not be tempted to skip this step).
Step 8
Place the ribs, meaty side up, on the prepared baking sheets, and pour any remaining marinade over them.
Step 9
Bake the ribs for 1 1/2 hours.
Step 10
Crank up the heat to 400° & continue to cook the ribs fire 20 to 25 more minutes. Generously baste them toward the end of the cooking time period watch to make sure they do not burn..
Step 11
Once finished baking, arrange the ribs on the grill, meatier side down, and grill, turning the ribs frequently so they won't burn and basting them as you go with any marinade that remains on the baking sheets.
Step 12
Let the ribs sit for 5 or 10 minutes before slicing them.
