Homemade Basil Pesto with Linguine

Deliciously simple, homemade basil pesto, quick & easy to make and my go to pesto recipe. This was served with linguine and topped with black pepper and extra Parmesan.

Instructions
Step 1
Bring a pan/pot of salted water to the boil.
Step 2
Add the Linguine to the pan of boiling water. Cook for 10 Minutes.
Step 3
Lightly toast the pine nuts in a frying pan with no oil until golden.
Step 4
While the pine nuts are toasting, grate the Parmesan.
Step 5
Roughly chop the basil.
Step 6
Grate 1 whole clove of garlic.
Step 7
To a food processor, add the grated garlic, sea salt, chopped basil & toasted pine nuts. Drizzle a healthy amount of olive oil and blitz for 2 minutes.
Step 8
Check the pesto for seasoning.
Step 9
Once linguine is cooked, drain reserving the pasta water.
Step 10
To a frying pan add two generous spoonfuls of the pesto.
Step 11
Add a ladle of the reserved pasta water to loosen the sauce.
Step 12
Add the linguine to the pesto sauce.
Step 13
Cook until all the pasta is coated in the pesto and the sauce has thickened.
Step 14
Serve into bowls, top with freshly ground black pepper and added Parmesan.
