Step 1
Chop the onions into cubes and set them aside. Cut the leeks through the length and then cut them into thin slices. Rinse.
Step 2
Heat a pan over medium heat and add the oil. Then add the leeks and cook for around 3-4 minutes.
Step 3
Add the potatoes and garlic and stir to combine. Pour in the vegetable broth and salt.
Step 4
Bring to a boil, cover and let simmer for around 15 minutes, until the potatoes are soft.
Step 5
Blend and add some chives and dill to taste.
