Ingredients
6 servings
For the base meat and flavors
1 tablespoonolive oil
2 poundsground turkey
or other ground meat of choice
1onion
large coarsely chopped, or as much/little as you want
3 clovesgarlic
chopped, or as much-little as you want
1sweet red pepper
large, cored, deveined and coarsely chopped, or as much/little as you want
1 cupcelery
chopped, or as much/little as you want
1jalapeno pepper
seeds left in, optional 2nd one deveined for more flavor
1 tablespoonoregano
dried or freshly chopped
2bay leaves
3 tablespoonschili powder
2 teaspoonsground cumin
For the rest of the chili:
3 cupscanned diced tomatoes
or whatever other type of tomatoes you want
2 cupschicken broth
homemade with love!
2 x 15 ouncecans of red kidney beans
drained
15 ouncesCannellini beans
OPTIONAL
salt
to taste
black-pepper
Freshly ground, to taste
Suggested Toppings:
Instructions
Step 1

Chop the vegetables (onions, red peppers, celery, jalapenos, and garlic) to your preferred sizes.
Step 2

Heat a large pot over medium-high heat, add enough oil to cover the bottom and wait for oil to heat up, then add your meat and chop down with a wooden spoon to your desired chunk size.
Step 3

Add your chopped vegetables (onions, red peppers, celery, jalapenos, and garlic). Add your seasonings (oregano, chili powder, cumin, bay leaves). Stir and combine, browning veggies until desired level (~5-10 minutes)
Step 4

Add your tomatoes and enough chicken broth to reach the top of the sautéed meat and veggies (or you can add more if you like).
Bring to a boil, reduce heat and let simmer, stirring occasionally, for at-least 15 minutes.
Step 5

Add the drained beans and cook, stirring occasionally for at least another 10 minutes.
Step 6

Serve with any desired toppings!
