Instructions

Step 1
HEAT the olive oil in a large skillet over medium-high hest turkey and garlic and cook, breaking up the meat with a wooden until the turkey is browned, about 5 minutes.
Step 2
Add the carrot mixture, chili powder, cumin, and salt and cook, stirring occasionally, until vegetables are tender, 5 minutes.
Step 3
Add the squash and tomatoes and bring to a boil.
Step 4
Reduce the heat to simmer, stirring occasionally, until the squash is tender, 10 to 12 utes.
Step 5
Serve with the toppings, if desired.
