Ingredients
2 servings

450gground turkey

1 Tbspolive oil

1onion
small, finely diced

2garlic cloves
minced

1 Tbspfresh ginger
grated

1bell pepper
diced

1carrot
julienned

2 Tbspsoy sauce
or coconut aminos for gluten-free

1 Tbsphoisin sauce
optional

1 tspsesame oil

1 Tbsprice vinegar

1 tspsriracha
adjust to taste

½ cupwater chestnuts
chopped, for crunch

¼ cupgreen onions
sliced

1 headbutter lettuce
or romaine, leaves separated

Sesame seeds

cilantro
for garnish
Instructions
Step 1
Get the lettuce ready:
Wash and pat dry the lettuce leaves gently. Put aside.
Step 2
Sauté Aromatics:
In a skillet over medium heat, warm the olive oil. Cook the ginger, garlic, and onion for one to two minutes, or until fragrant.
Step 3
Cook Turkey:
Use a wooden spoon to break up the ground turkey. Cook for 5 to 6 minutes, or until browned.
Step 4
Add the vegetables:
Stir in the water chestnuts, carrot, and bell pepper. Cook until slightly tender, 3–4 minutes.
Step 5
Add soy sauce:
Hoisin, rice vinegar, sesame oil, and sriracha for seasoning. Stir thoroughly.
Step 6
Simmer:
Simmer for two minutes, adding a dash of water if necessary.
Step 7
Add green onions:
Stir to garnish and serve. Transfer the mixture into lettuce cups and sprinkle with cilantro and sesame seeds.
