This recipe is my take on pizza at Trattoria Pizzeria La Bufala: it is cross-cut at the center, filled with some buffalo ricotta and black truffles, garnished with arugula, cherry tomatoes, and fresh buffalo mozzarella. I could only utilize the presentation idea and the ingredients available in Central Texas.

Instructions

Step 1
Dissolve salt and honey in water. Combine all ingredients and make a slightly sticky, soft, and supple dough. Shape the dough into a ball, brush it with olive oil, and place it inside its zipped freezer bag. Keep the dough at room temperature for 15-20 minutes, then put it in the refrigerator for at least 12 hours. Remove from the fridge 2 hours before making pizza.

Preheat oven to 500F, top shelf, baking stone in.
