Instructions

Step 1
Break tofu info medium size pieces and add to a food processor. Add the chopped white onion and whole garlic clove with seasonings and olive oil and blend until creamy. Once the tofu is creamy add spinach and pulse until the spinach is incorporated into the tofu ricotta. Adjust to taste and stuff shells.
Step 2
Spray glass pan with cooking spray. Put a layer of sauce and place the stuffed pasta in the pan. Cover with remaining sauce. Cover with foil and bake for 45 min at 350
