Step 1
Step 1 Preheat the oven to 220°C.
Step 2
Lay the peppers and courgette on a roasting tray in an even layer, drizzle with half of the oil and season with salt and pepper.

Roast for 15 minutes until softened.
Step 4
Remove from the oven and preheat the grill to its highest setting.
Step 5
Step 2 Meanwhile heat the remaining olive oil over a high heat in a medium-sized, non-stick frying pan.

Add the peppers and potatoes to the pan and give everything a shake to flatten out in an even layer.

Step 3 Beat the eggs, egg whites and chives together and season with salt and pepper.
Step 8
Pour the eggs over the vegetables then gently shake the pan and pull the eggs into the middle as they start to set.
Step 9
Crumble the feta over the top then slide the pan under the hot grill.
Step 10
Cook for around 3 minutes until the top of the frittata is golden brown and the eggs are set.
Step 11
Slide onto a board, cut into wedges and serve with the salad.
