Instructions
Step 1
Heat olive oil in a saucepan over medium high heat until shimmering.
Step 2
Add quinoa and toast for 4 minutes, stirring constantly.
Step 3
Add water and broth. Bring to a rolling boil.
Step 4
Cover, lower heat to a low simmer and cook for 15 minutes.
Step 5
Remove from the heat and let sit for 5 minutes without opening the lid.
Step 6
Fluff with a fork. If any water is remaining, you can cook at low heat, covered, for another 5 minutes.
