Stuffed Pepper Skillet Meal

Instructions

Step 1
In a large skillet over medium heat, brown ground beef and drain
Step 2
Return skillet to heat and add bell peppers, onion, minced garlic and cook for 2 minutes
Step 3
Stir in diced tomatoes, broth, tomato paste, salt and pepper, rice, and red pepper and cumin
Step 4
Bring mixture to a boil, cover and reduce heat. Simmer for 18 minutes or until rice is fully cooked
Step 5
Fluff with fork, add cheese if desired, serve and enjoy!
